Fresh and fruity, this recipe for homemade cold tea with rhubarb and strawberries will accompany you all summer long. Strawberries not in season yet? Use only rhubarb. And when rhubarb is out of season, replace it with strawberries, raspberries and other summer berries.

Preparation time: 30 minutes
Time: a few hours to cool
Ingredients
3 liters of water
400 g rhubarb and 250 g strawberries cut into small pieces, or 600 g rhubarb, or 600 mixed berries
Making homemade cold tea with rhubarb and strawberries
Bring the water, sugar and fruit to the boil, then simmer for 15 minutes.
Add the hibiscus flowers, remove the pan from the heat and allow to cool.
Pour the liquid through a strainer into a carafe and squeeze the fruit well.
Add syrup and mint
Place in the refrigerator or chill cold tea with ice cubes.
Serve!
You can reclaim your fruit! Blend them to make a compote, add them to apples for a crumbleflavour plain yoghurt or use as a base for tarts, for example.
