Seasonal recipe – May 2023: Rhubarb & apple crumble with oat flakes.
A seasonal recipe with rhubarb, the fruit that makes people happy, thanks to its sparkling pink color and tangy taste. Quick and easy to make, this dessert is always a hit. It’s also easy to make a vegan and/or gluten-free version.
If you have a small vegetable garden, we recommend planting rhubarb, as it’s a perennial plant: you plant it once and harvest it over several years.

Ingredients (serves 4):
- 2 rhubarb stalks
- 2 apples
- 2 pears (if you don’t have any, use 4 apples instead of 2, or use strawberries/raspberries, which are also very good)
- A sprinkling of sugar & cinnamon
For the dough:
- 60g butter or vegetable margarine (solid coconut oil also works)
- 60g brown sugar
- 60g hazelnut powder
- 50g normal or oat flour (for gluten-free)
- 50g rolled oats
Preparation:
- Preheat oven to 180°C. Peel and chop the rhubarb. Then dice the apples and pears.
- Place in the bottom of an ovenproof dish and sprinkle with sugar and cinnamon.
- In another bowl, place the butter in small cubes with the sugar, flour, rolled oats and hazelnut powder.
- Mix with fingertips to form a grainy paste.
- Spread the dough over the mixture.
- Bake for 25-35 minutes! Once bubbles appear on the side and the pastry is golden brown, it’s ready 🙂
 
Serve the Oatmeal Rhubarb & Apple Crumble warm with a scoop of ice cream or sorbet, for example!
