Seasonal recipe – May 2023: Rhubarb & apple crumble with oat flakes.

A seasonal recipe with rhubarb, the fruit that makes people happy, thanks to its sparkling pink color and tangy taste. Quick and easy to make, this dessert is always a hit. It’s also easy to make a vegan and/or gluten-free version.

If you have a small vegetable garden, we recommend planting rhubarb, as it’s a perennial plant: you plant it once and harvest it over several years.

Rhubarb crumble Rhubarb & apple crumble with oat flakes

Ingredients (serves 4):

  • 2 rhubarb stalks
  • 2 apples
  • 2 pears (if you don’t have any, use 4 apples instead of 2, or use strawberries/raspberries, which are also very good)
  • A sprinkling of sugar & cinnamon

For the dough:

  • 60g butter or vegetable margarine (solid coconut oil also works)
  • 60g brown sugar
  • 60g hazelnut powder
  • 50g normal or oat flour (for gluten-free)
  • 50g rolled oats

Preparation:

    1. Preheat oven to 180°C. Peel and chop the rhubarb. Then dice the apples and pears.
    2. Place in the bottom of an ovenproof dish and sprinkle with sugar and cinnamon.
    3. In another bowl, place the butter in small cubes with the sugar, flour, rolled oats and hazelnut powder.
    4. Mix with fingertips to form a grainy paste.
    5. Spread the dough over the mixture.
    6. Bake for 25-35 minutes! Once bubbles appear on the side and the pastry is golden brown, it’s ready 🙂

Serve the Oatmeal Rhubarb & Apple Crumble warm with a scoop of ice cream or sorbet, for example!
