If you’ve never seen bananas turn black in your fruit dish, come forward!
And then, when they’re no longer appealing, rather than throwing them away, what do you do with them?
We’ve come up with this “banana bread”-style cake recipe to reuse your old bananas. Super-simple, healthy, nutritious, zero waste.
Here’s our super-simple recipe:
- Mix 200g flour, 150g brown sugar and 1/2 teaspoon baking soda.
- Mix 70g melted butter, 2 eggs, 60ml milk and 2 mashed bananas.
- Fold the wet ingredients into the dry, making a well, and add a large handful of crushed dark chocolate. Mix well.
- Finally, pour the mixture into a greased cake tin.
- Bake at 160 degrees for 45-50 minutes.
For the vegan version:
- replace the 70g of butter with 70g of peanut butter
- replace the 2 eggs with 4 teaspoons of ground flaxseed mixed with 4 tablespoons of water
- replace the 60ml of milk with 60ml of water.
What about the skin?
For the ultimate in zero-waste, we reuse it to make a natural fertilizer for plants.

Ps: And if we may make an easy suggestion to limit food waste and the ecological footprint of bananas, which come from far away, then rather than buying bananas in packs of 6, choose the solo banana!
There are always 2-3 that die of loneliness alone on the shelf, and will be thrown away at the end of the day anyway. An easy thing to do!
