And with this recipe, you can easily make <b>6-7 large jars<\/b>. <\/p>\n<p>If your garden is particularly generous and you don&#8217;t know what to do with all those zucchinis, double the quantities!<\/p>\n<p>The marinating process and rest periods take place <b>over 4 days<\/b>, but implementation is <b>simplicity itself<\/b>, taking just a few minutes at each stage.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/sitetest3356.files.wordpress.com\/2019\/08\/fa489-dea1bc_6110e8d586294f27aae4c05bd1927834mv2.jpg\"><\/p>\n<p style=\"text-align: center\"><b>Ingredients<\/b><\/p>\n<p style=\"text-align: center\">2 kg zucchini (green, yellow, round, your choice!)<\/p>\n<p style=\"text-align: center\">1 large onion<\/p>\n<p style=\"text-align: center\">salt<\/p>\n<p style=\"text-align: center\">5 dl apple vinegar<\/p>\n<p style=\"text-align: center\">400 g sugar<\/p>\n<p style=\"text-align: center\">3 tablespoons curry powder<\/p>\n<p style=\"text-align: center\">2 tsp peppercorns<\/p>\n<p style=\"text-align: center\">100g sugar<\/p>\n<p><b>How to proceed<\/b><\/p>\n<p><b>Day 1<\/b><\/p>\n<p>Wash the zucchinis, peel if necessary and trim the ends. Cut into small cubes, removing the central part with the seeds if the zucchinis are very large. <\/p>\n<p>Cut the onion into thin rings.<\/p>\n<p>Place in a large bowl, sprinkle with 2 tbsp salt, mix well and leave to drain for a day, covered and chilled if possible.<\/p>\n<p><b>Day 2<\/b><\/p>\n<p>Transfer to a colander, drain and rinse in cold water. Drain well again. <\/p>\n<p>In a large saucepan, bring 5dl water, 5dl apple vinegar, the 400g sugar, curry powder and peppercorns to the boil. Pour the boiling &#8220;syrup&#8221; over the zucchinis, in a large heatproof bowl. <\/p>\n<p>Cover and leave to marinate in a cool place for one day.<\/p>\n<p><b>Day 3<\/b><\/p>\n<p>Sprinkle with 100g sugar, cover, chill and marinate for a further 1 day.<\/p>\n<p><b>Day 4<\/b><\/p>\n<p>Start by washing the jars thoroughly, or even sterilizing them. Bring the zucchinis to the boil in the syrup and simmer for 5 minutes. <\/p>\n<p>Transfer while still boiling to the jars, close tightly, and place your jars on the lids, to sterilize the lids.<\/p>\n<p>Once warm, turn the jars right-side up and leave to stand for 15 days before tasting.<\/p>\n<p>These jars keep for months in a dry, dark place.
