Yes, raw, without cooking! It gives you all the precious vitamins and minerals found in summer fruit!  <\/p>\n<p style=\"text-align: left\">We combine it with <b>flaxseeds<\/b>, a local superfood, because their characteristic mucilage makes the texture smooth and thick, like a cooked jam.<\/p>\n<p>It&#8217;s an <b>instant pleasure<\/b>, you might say, because raw jam <b>can&#8217;t be preserved<\/b> to warm up the long winter months. It&#8217;s best eaten on the spot, in small quantities, or at best frozen. <\/p>\n<h3>We tested it, and it explodes in your mouth. And you have to admit, this raspberry jam is rather photogenic \ud83d\ude09 <\/h3>\n<p>We&#8217;ve got the recipe, so get ready to pick!<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/sitetest3356.files.wordpress.com\/2019\/07\/2a843-dea1bc_8768ca12064a46ba943d96263214326cmv2.jpg\"><\/p>\n<p><b><em>For a 300g jar<\/em><\/b><\/p>\n<ul>\n<li>250g <b>ripe fruit<\/b> (raspberries here, but can be replaced by blueberries, cherries, apricots&#8230;)<\/li>\n<li>2 tbsp.<b> flaxseed <\/b>(flax for a local version, or chia for a version from further afield, depending on what you have in your cupboards). <\/li>\n<li>1 tbsp. <b>lemon juice<\/b> <\/li>\n<li>1 heaped teaspoon <b>wholemeal sugar<\/b> <\/li>\n<\/ul>\n<p style=\"text-align: center\"><b><em>Preparation<\/em><\/b><\/p>\n<p style=\"text-align: center\">Wash the fruit and remove any leaves, skins, seeds or pits.<\/p>\n<p style=\"text-align: center\">Place the fruit and remaining ingredients in a blender. Blend for 1 to 2 minutes. <\/p>\n<p style=\"text-align: center\">Transfer the mixture to a clean jar and leave to thicken at room temperature (2h), then refrigerate for a few hours.<\/p>\n<p><b><em>Remarks<\/em><\/b><\/p>\n<p>* Ground linseeds (or chia seeds) create a <b>mucilage<\/b> that sets the jam raw and gives it its velvety texture. This <b>preserves the vitamins <\/b>present in the fruit, which &#8220;traditional&#8221; cooking deteriorates. <\/p>\n<p>*<b> Very little sugar is<\/b> added to the raw version, whereas a classic jam contains 60-80g of sugar per 100g of fruit.
